Sorry guys, I know it’s been a while, and I have no excuse other than my baby doesn’t sleep! And working past 7pm makes me feel all queasy ahaha.
April was a pretty pants month for me business wise. I think I had got complacent over the attendance at open houses and relied heavily on Easter being busy which unfortunately didn’t materialise due to the outrageously good weather. (There are worse reasons to not sell out!)
After sitting down and taking stock, I have realised I need to get back to basics and enjoy baking again, which is the reason why the brownie box started in the first place.
So, as a little treat for you all, I have finally written down my banana bread recipe! Which is a huge step for me as I never write anything down or even weigh ingredients really as a rule, especially when I am just baking for fun!
If you do give this a go, please tag me in your photos. I would love to see how you have tweaked the basic recipe to make it your own! This is just the simple banana bread. Ordinarily, I would add blueberries or chocolate chips.
Banana Bread Recipe
280g self raising flour
½ tsp salt
120g butter or soft spread, plus extra for greasing (you can use the same amount of coconut oil for a healthier version)
250g dark brown soft sugar (or use coconut sugar for a healthier version)
2 large eggs (beaten)
4 ripe bananas, mashed (the darker the better!!)
90ml plain natural yoghurt
2 tsp cinnamon (Adjust to your own taste. I love spice.)
Preheat the oven to 170C.
Sift the flour into a large mixing bowl
In a separate bowl, cream the butter and sugar together until a latte colour.
Add the eggs, mashed bananas, buttermilk and vanilla extract to the butter and sugar mixture and mix well. Fold in the flour mixture.
Grease and line an 8” round and pour the cake mixture into the tin.
Transfer to the oven and bake for about 45 minutes, or until well-risen and golden-brown. To check if the cake is done, remove from the oven, put a clean knife into the centre and remove. If it comes out clean then you’re all set!
Remove from the oven and cool in the tin for a few minutes, then turn out onto a wire rack to cool fully.
When I first set up the website, I had every intention of weekly updates, with recipes, event listings and everything in between. And, as you can probably see, I have 100% not achieved anywhere near that level of activity! This blogging game is so hard, especially when you throw running a business, a baby and sleep deprivation into the mix.
My new years resolution this year was to keep on top of the Brownie Box social media and content. Three months down the line and I know that I need to be more consistent, although how much better are the photographs now!?!? Huwaei have seriously upped the smartphone camera game. So, from today, I vow to give a monthly update of where I am personally, and professionally with the Brownie Box.
The last few months have been wild, with sell out open houses and incredible order volumes for both Mother’s Day and Valentine’s Day. As a business, we have been pushing ourselves constantly to create new and exciting products. Our personal favourite has to be the birthday cake batter cookies which went live this morning!
I am almost nearing the end of maternity leave, which will hopefully mean a return to cakes in the near future once little man is in nursery and I have a bit more time to myself.

I get it, it’s January, it’s miserable, Christmas has taken its toll and you want to feel healthy again. I’m in exactly the same boat and have finally rejoined a gym!!! And I’ve actually been more than once too.
There’s nothing better than knowing you have eaten well, exercised and completed your skincare regime (I have genuinely managed this every day since Christmas after Adam bought me some swanky body shop bits) but after a while, chicken, kale and quinoa gets pretty boring. And that’s where we come in!
If you follow me on social media, you may have noticed some seriously decadent goodies coming out of the kitchen. All this exercise has given me a new lease of life and I’m soooo ready to get creative again in the kitchen. I’ll still be sticking to mainly brownies and cookies (I’m still traumatised from pregnant cake making) but be prepared for all sorts of naughtiness!
It’s over and out for now, but another of my resolutions is to keep up with the blog, and potentially get some recipes out there to you guys too!
And just like that, life can change! If someone had told me this time last year, that I would be the proud owner of a hungry 5 month old, I would have laughed and questioned your sanity, yet here we are, a happy family getting ready for our first Christmas together.
I am so grateful to you all for your kind messages after James made his entry into the world rather early. It meant cancelled orders and missed weddings but every single customer was so understanding and I cannot thank you all enough. It made such a stressful time so much easier.
That being said, the big C word is looming, and its time for the brownie box team to get our arses into gear so that we can supply you all with the very best brownie goodness.

As I am sitting her on a freezing cold Sunday afternoon binge watching old GBBO episodes, I’m finding it impossible to believe that we are nearing the end of April already. This year is flying by, which is slightly scary considering everything that needs to be done before my little pudding arrives at the end of summer.
The turn of the seasons does mean that I am back on the food and craft market circuit again for this summer, albeit on a slightly smaller scale than last year so that I don’t keel over. You can find us next week in my home town of Coventry, taking part in the annual Earlsdon Festival on 07/05, which is looking set to be a sunny day filled with food, entertainment and activities for all tastes and ages :).
Following this, we are at the Millpool in Coventry again for the next May bank holiday on 26/05 taking part in their spring event.
As you may have seen from my social media posts, I am slowing down on celebration cakes for the foreseeable future as I need to focus attention on making any events the best they can possibly be. (Plus, my belly is getting bigger and bigger, meaning I cant reach to decorate the cakes anymore!) Please still send any enquires over, as I may be able to free up some time, however, taking custom cake orders wont be a priority now until next year.

Apologies for my internet silence over the last few months. Blogging and social media isn’t really my forté and I have to really work hard to keep up with everything as well as running the business side and baking side of the Brownie Box.
2018 has been a very interesting year so far, with lots of changes both in the business and personally. The brownie box is now back to being a 1 man band for now, with the majority of orders being taken via this fabulous website designed by Mellow Digital which I am finally getting to grips with. This is still a work in progress, and I am happy to take any suggestions on board for improvements. Please email them over. Sometimes it’s hard from his side of the checkout to see issues that you guys may have when navigating and ordering.
On a personal level, the last 3 months have been really difficult for me, as you may have noticed from the social pages being quiet and a slow down in workload. Although a lot of my lovely customers who I have seen have already heard the news, I am now cooking my very own little cupcake, due at the end of summer, and my goodness it is hard work!
Anyone who tells you pregnancy is a dream is fibbing! the first few months are a blur of Netflix, emotional breakdowns and crisps, but we are out of the other end now, and it is going to be so worth the exhaustion when our little bundle of joy arrives :).
Baby brain has well and truly set in, so please bear with me over the next 6 months while I have to retrieve my car keys from the fridge, set reminders on my phone about why I have had to go upstairs and completely forget your names or the flavours I’m reeling off at an open house (this happened last week several times and you were all wonderfully patient!).
I’ll be working for as long as I can until baby arrives but will of course keep you all posted in the meantime ):.
I can’t believe I am sat here writing this already. 2017 seems to have disappeared in the blink of an eye and there’s so much going on at brownie box HQ, its hard to keep track of the days!
If you are following me on Facebook & Insta, you may already be aware of some of the changes such as moving all retail and enquiries onto the website from February onwards, as well as an increase in markets and pop-up shops :). I will also be upping my wholesale over the next few months. Keep an eye out for new stockists locally.
After the madness of Christmas, I have decided that preparation is key for this year. All of the farmers markets are booked in, and there will be a twice monthly open house starting in February, which we can hopefully take into the garden weather permitting.

This evening (Fri 8th Dec) we are taking part in the second FarGo Village Night Market. Located in the market hall, this event looks set to be as busy as the opening show, with entertainment from a choir, singers and performers throughout the evening.

As most of you that follow me on the social media pages are aware, The Brownie Box has undergone a lot of expansion over the last 12 months, culminating in the recruitment of an apprentice in Keeleigh back in August.
This was a huge step in both personal and professional development for both myself (I am a huge control freak) and for keeleigh who wanted to pursue a career in something that would appreciate her creativity!!
Fast forward 4 months, and Keeleigh has learnt the basics of how we work as a company, as well as some seriously good skills in the kitchen which truly shone when she cooked up a storm for my 25th birthday last month.
I seriously cannot wait to see how we can progress as a team; keep your eyes peeled for some keeleigh specials (her shortbread is to die for) over the next few months.
